- 6 c. grated zucchini
- 1/4 c. chopped onion
- 1 can cream of mushroom soup
- 2 c. grated Cheddar cheese
- 1 c. sour cream
- 1 c. shredded carrots
- 1 (8 oz.) pkg. Pepperidge Farm stuffing mix
- 1/2 c. melted oleo
Directions

1Cook zucchini and onion in boiling water 5 minutes and drain. Combine soup, cheese, sour cream and carrots; fold in squash and onion.

2Combine stuffing and oleo.

3Put 1/2 of stuffing mix on bottom of pan.

4Place squash mixture on stuffing.

5Cover top of squash mixture with remaining stuffing.

6Bake at 350° for 25 to 30 minutes.
