- 5 lb. potatoes
- 2 sticks margarine
- 1-1/2 cans evaporated milk
- 1 large onion, finely chopped
- 1 bunch green onions
- 1 bunch parsley, chopped
- 6 to 8 oz. cheddar cheese, grated
- 10 slices bacon, fried and crumbled
- salt and pepper to taste
Directions

1Boil potatoes and cut in small pieces; add margarine and milk.

2Mix until soupy.

3Add onions, green onions and parsley; mix.

4Add bacon, salt and pepper.

5Bake at 425 degrees for 20 to 30 minutes until perfect consistency.

6Melt cheese on top for last 5 to 10 minutes.
