  • 4 cups Chicken Broth
  • 1-1/2 cup Potatoes, Peeled And Diced
  • 1 cup Celery, Chopped
  • 1 cup Carrots, Shredded
  • 1/2 cups Onion, Chopped
  • 1/2 cups Butter
  • 1/2 cups Flour
  • 3 cups Milk
  • 8 ounces, weight Velveeta Cheese, Cubed
  • 3 cups Chicken, Cooked And Cubed
  • 1 Tablespoon Soy Sauce
  • Pepper To Taste

Directions

    Combine broth and vegetables; cook until tender. Melt butter in a stock pot. Add flour and stir until smooth. Cook for one minute. Gradually stir in milk (I use fat-free skim milk). Cook over medium heat until thick and bubbly. Gradually add vegetables and broth. When heated through, add cheese and chicken. Simmer until cheese melts. Season with soy sauce and pepper, to taste.
