- 1 c. cubed ham or Canadian bacon
- 1/4 c. chopped green onion
- 3 Tbsp. melted margarine
- 1 doz. eggs, beaten
- 1 (4 oz.) can mushrooms
- Cheese Sauce
- 1/4 c. melted margarine
- 2 1/4 c. soft bread crumbs
- 1/8 tsp. paprika
Directions

1Saute ham and onions in 3 tablespoons butter in large skillet until tender.

2Add eggs and cook over medium-high heat, stirring to form soft curds. When eggs are set, stir in mushrooms and Cheese Sauce.

3Spoon eggs into 13 x 9 x 2-inch pan.

4Combine 1/4 cup melted margarine and crumbs, mixing well; spread over egg mix. Sprinkle with paprika.

5Cover and chill overnight.

6Uncover and bake at 350° for 30 minutes.
