- 1 3/4 ounces pine nuts
- 4 strips bacon thinly sliced
- 5 1/4 ounces mixed salad greens
- 1 avocado chopped
- 1/2 red pepper deseeded, cut into strips
- 1 cucumber chopped
- 1 ounce Parmesan shaved
- 1/4 cup vegetable oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon dijon mustard
Directions

1Toast pine nuts in a frying pan, shaking pan occasionally, until lightly browned. Remove nuts from pan. Add bacon to pan and cook, stirring, for 5 mins or until bacon is crisp. Drain bacon on paper towel.

2Place salad greens in a serving bowl. Top with avocado, pepper, cucumber, Parmesan, bacon and pine nuts.

3Combine oil, vinegar and mustard in a screw-top jar; shake well. Drizzle over salad.
