  • 12 tbsp (1 1/2 sticks) butter, melted
  • 6 None egg whites, lightly beaten
  • 1 cup ground almonds
  • 2 cups powdered sugar
  • 1/2 cup flour
  • 1 lb fresh cherries, pitted

    Preheat the oven to 400°F. Grease 12 small rectangular pans or a 12-cup muffin pan (1/3-cup capacity).

    Combine butter, egg whites, ground almonds, sifted powdered sugar and flour in a large bowl. Divide mixture among prepared pans. Sprinkle with cherries.

    Bake for about 25 mins. Cool in pan 5 mins. Remove from pan; cool completely on wire rack. Dust with powdered sugar, if desired.
