  • 10 Tablespoons Butter, Unsalted
  • 13 cups Unsweetened Cocoa Powder
  • 7 Tablespoons Sugar
  • 1 teaspoon Vanilla
  • 2 whole Eggs
  • 4 Tablespoons Plain Flour
  • 3/4 cups Cherries, Pitted

    Preheat oven to 170 degrees C (340 degrees F).

    Dice butter and place it in a heavy-bottomed saucepan.

    Put it over medium heat and when it starts melting, sift in cocoa powder and whisk until melted and well blended.

    Remove from heat and add sugar.

    Mix for a few seconds until sugar starts to dissolve, then add vanilla and the eggs, one at a time, whisking well after each addition.

    When you add the last egg and whisk it in, the batter will become smooth and glossy and thick.

    Finally, add flour and cherries (frozen or fresh) and fold through the batter just until combined.

    Do not overmix the batter at this point.

    Grease (or line) a small baking pan (18x18 cm; 7x7-inch), pour in batter and bake in a preheated oven, at 170 degrees C (340 degrees F), for about 15 minutes.

    Check it with a toothpick around 12 minutes or so, just to make sure brownies do not overbake, because if they do, they will be dry and crumbly.
