- 2 - 8 oz. cream cheese (room temperature)
- 1 tbsp. vanilla
- 2 eggs
- 3/4 c. sugar
- 1 tbsp. lemon juice
- vanilla wafers
- 1 can cherry pie filling (Strawberry or Blueberry)
Directions

1Line cupcake pan with liners.

2Place a vanilla wafers in each liner.

3Beat together, cream cheese, sugar, vanilla, eggs and lemon juice.

4Fill each cup 3/4 full.

5Bake 15 minutes in 375°F. oven. Cool and spoon pie filling over each tart.

6Chill in refrigerator until ready to serve.

7Can be made a day ahead.

8Makes 18-20 tarts.
