- 1 cup graham cracker crumbs
- 14 cup butter or 14 cup margarine, melted
- 1 cup sugar, divided
- 2 (250 g) packages cream cheese, softened
- 1 teaspoon vanilla extract
- 1 (2 liter) container light vanilla ice cream
- 1 (650 g) can cherry pie filling (or your favorite pie filling)
Directions

1In a medium bowl, combine graham cracker crumbs, melted butter and 1/4 cup sugar; press into 9-inch springform pan.

2Freeze for 15 minutes.

3Meanwhile, in a large bowl, beat cream cheese, remaining sugar and vanilla with electric mixer until smooth; set aside.

4Spoon ice cream over crust in springform pan, pressing to form an even layer.

5Evenly spread cream cheese mixture over ice cream.

6Cover and freeze for 5 hours or overnight.

7Freeze serving for 30 minutes before serving.

8Remove cheesecake from freezer and top with cherry pie filling.

9Dip knife or metal spatula in hot water,m then wipe dry and run around edge of cake to loosen., Remove ring from pan.

10Arrange cake on chilled serving platter.
