  • 34 cup all-purpose flour
  • 3 tablespoons confectioners' sugar
  • 3 tablespoons butter, cold
  • 1 egg
  • 2 egg whites
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 14 cup all-purpose flour
  • 12 teaspoon baking powder
  • 14 teaspoon salt
  • 12 cup maraschino cherry, quartered
  • 13 cup walnuts, chopped
  • 13 cup flaked coconut

    Preheat oven 350.

    In a food processor place flour and confectioners sugar; cover and process until blended.

    Add butter, cover and pulse 15 times, until mixture resembles fine crumbs.

    Press into 9 in square baking pan coated with nonstick cooking spray.

    Bake at 350 12-15 mins until lightly browned.

    Cool on wire rack.

    For filling combine the egg, egg whites, sugar, and vanillain a bowl.

    Combine the flour, baking pwd, and salt; add the egg mixture.

    Stir in cherries, nuts, and coconut.

    Spread over the crust.

    Bake for 20-25mins or until firm.

    Cool on wire rack.
