Cherry Cream Cakes

  • 16 oz. cream cheese
  • 2 eggs
  • 1/2 c. sugar
  • 2 tsp. vanilla
  • 1 box vanilla wafers
  • 1 can cherry pie filling

Directions

    Line muffin tins with paper cups.

    Put vanilla cookie in bottom of each cup.

    Have cream cheese at room temperature. Cream the cream cheese, eggs, sugar and vanilla together.

    Mix until light and fluffy.

    Fill cups 2/3 full of mixture.

    Bake at 350° for 12 to 15 minutes.

    When cool, spoon 2 teaspoons cherry pie filling on top of each.

    Makes 22 to 24 cakes.
