- 3/4 c. flour
- 1/2 tsp. salt
- 1/2 tsp. baking powder
- 2 c. whole, fresh cranberries
- 1 c. dates, chopped
- 3 1/2 c. nuts
- 2 eggs
- 3/4 c. sugar
- 1 tsp. lemon extract
Directions

1Mix together in a large bowl the flour, salt and baking powder. Add cranberries, dates and chopped nuts.

2Toss until fruit and nuts are evenly coated with flour mixture.

3Beat in small bowl until light and fluffy the eggs, sugar and lemon extract.

4Pour over fruit and nut mixture.

5Mix thoroughly to coat fruit and nuts.

6Use small size nonstick muffin tins, dropping a heaping tablespoonful in each.

7Bake at 350° for 15 minutes or until done.
