Ingredients

  • cherry juice from drained cherries plus water to equal 1 gal.
  • 1 tsp. salt
  • 1 lb. sugar
  • 1/4 c. lemon juice
  • 2 c. quick cooking tapioca
  • 6 c. tart cherries, drained
  • 2 tsp. almond extract
  • whipped topping (optional)

Directions

    Bring juice, salt, sugar and lemon juice to a boil.

    Gradually add tapioca.

    Cook 15 minutes on low heat, stirring continually. Remove from heat.

    Cool.

    Fold in cherries and almond extract. Chill.

    Serve topped with whipped topping.
