  • 1 lb. dates, chopped
  • 1 lb. pecans or walnuts (4 c.)
  • 1/2 lb. red and green cherries
  • 1/2 lb. red and green pineapple
  • 1 c. sugar
  • 4 eggs
  • 1 tsp. vanilla
  • 1 c. flour
  • 1 tsp. baking powder

Directions

    Put sugar over the nuts and mix well.

    Beat eggs and mix with vanilla.

    Sift flour and baking powder.

    Mix all together well, using your hands or a good strong wooden spoon to mix.

    Grease and flour tube pan well.

    Bake 1 1/2 hours at 300°.

    Put a pan of water on bottom shelf of oven.

    This will help to keep it from turning too brown and drying out.

    Let set a few minutes before turning out but don't let it get cold, for it will stick.
