- 1 Tbsp. sugar
- 1 Tbsp. cake flour
- 1 (1 lb.) can red tart pitted cherries
- 1 c. sugar
- 1/4 c. cake flour
- 1/8 tsp. salt
- 1/4 tsp. almond extract
- 1 tsp. lemon juice
- 1 Tbsp. butter
- pastry for 9-inch 2-crust pie
Directions

1Line a 9-inch pie pan with pastry.

2Sprinkle with 1 tablespoon sugar and 1 tablespoon cake flour.

3Drain cherries, saving juice. Combine sugar, cake flour and salt.

4Gradually stir in juice.

5Add almond extract and lemon juice.

6Combine with cherries and pour into pastry lined pan.

7Dot with butter and put top crust in place. Bake 30 to 35 minutes at 425°.
