  • 1 3/8 cups roasted chestnuts
  • 7 7/8 tablespoons whole milk
  • 3 3/8 tablespoons whipping cream
  • 6 2/3 tablespoons buckwheat flour
  • 1/2 teaspoon salt
  • butter

Directions

    Separate the eggs. Combine the yolks with the hazelnuts, milk, and cream in the blender and puree. Add the flour and mix well.

    Beat the eggs with a pinch of salt to form peaks. Fold into the chestnuts mixture.

    Melt a pat of butter in a skillet on medium heat. Pour in batter to form a thin pancake approximately 10 centimeters wide. Cook until golden on both sides, flipping.

    Keep warm until serving.
