Ingredients
- 1 box yellow cake mix with butter
- 3 eggs
- 1 c. coconut
- 1 c. water
- 1 (8 oz.) can cream of coconut
- 1 (15 1/2 oz.) can crushed pineapple
- 1/2 pt. whipping cream, whipped
Directions

1Grease and flour a 9 x 13-inch pan.

2In large mixing bowl, beat cake mix, egg and water for 2 minutes on medium speed; add coconut.

3Pour into baking pan and bake for 35 to 40 minutes at 350°.

4Remove from oven when done.

5While hot, poke holes in cake and pour cream of coconut over top with crushed pineapple.

6Let cool.

7Ice with 2 cups of whipped cream or Cool Whip.

8Sprinkle coconut on top and refrigerate.
