Ingredients

  • 1 box yellow cake mix with butter
  • 3 eggs
  • 1 c. coconut
  • 1 c. water
  • 1 (8 oz.) can cream of coconut
  • 1 (15 1/2 oz.) can crushed pineapple
  • 1/2 pt. whipping cream, whipped

Directions

    Grease and flour a 9 x 13-inch pan.

    In large mixing bowl, beat cake mix, egg and water for 2 minutes on medium speed; add coconut.

    Pour into baking pan and bake for 35 to 40 minutes at 350°.

    Remove from oven when done.

    While hot, poke holes in cake and pour cream of coconut over top with crushed pineapple.

    Let cool.

    Ice with 2 cups of whipped cream or Cool Whip.

    Sprinkle coconut on top and refrigerate.
