Daiquiri Fruit Salad

Ingredients
- 2 (20 oz. each) cans crushed pineapple, drained (reserve syrup)
- 2 3/4 c. liquid reserved syrup, plus water
- 3 pkg. (4 serving size) lime or lemon flavored gelatin
- 2 (6 oz. each) cans frozen limeade concentrate
- 1 c. mayonnaise or light salad dressing
- 1 c. light rum, if desired
- 1 c. whipping cream, whipped or 2 c. frozen whipped topping, thawed
- 4 medium bananas, sliced (if desired)
Directions

1In large saucepan, bring liquid to boiling.

2Stir in gelatin to dissolve.

3Remove from heat; stir in limeade concentrate and rum.

4Using wire whisk or electric mixer, blend in mayonnaise. Chill until thickened, but not set.

5Fold in pineapple, whipped cream and bananas.

6Spoon into 12-cup fluted tube pan.

7Chill until firm.

8Makes 10 to 12 servings.

9Recipe may be halved for 6-cup fluted tube pan.
