- 1 cup skim milk cottage cheese
- 1 cup orange juice
- 3 eggs
- 1/4 cup chia seeds
- 2 tablespoons olive oil
- 2 tablespoons psyllium husk
- 2 tablespoons water, or as needed
- 1 teaspoon butter, or as needed
Directions

1Mix flour, cottage cheese, orange juice, eggs, chia seeds, olive oil, psyllium husk, and water together in a bowl until batter is smooth.

2Heat butter in a griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.
