  • 2 sausages chopped
  • 7 tablespoons chihuahua cheese cubed, may substitute a mild cheddar or colby
  • 6 leaves romaine lettuce torn into bite-sized pieces
  • 1 tomato diced
  • 1/4 red onion cut into thin half moons
  • 1/2 pickles sliced
  • 2 tablespoons pickle brine
  • 1 teaspoon white vinegar
  • 2 tablespoons mustard
  • 2 tablespoons olive oil
  • salt and ground black pepper

Directions

    Fry the sausage until golden brown. Remove from pan and blot to remove excess grease.

    Mix the lettuce, tomato, onion, and pickles together in a salad bowl. Stir in the sausage.
