- 1 (1 lb.) box mochiko flour
- 2 1/2 c. sugar
- 2 c. water
- 1 (13 oz.) can unfrozen coconut milk
- 1 tsp. vanilla
- 1 tsp. baking powder
- 3 to 4 drops red or yellow food coloring
- 1 c. potato starch
Directions

1Mix together all dry ingredients except for potato starch. Gradually add water, coconut, milk, vanilla and food coloring.

2Mix until there are no lumps.

3Pour mixture into a greased 9 x 13-inch or two 11 x 7 x 1 1/2-inch pans.

4Cover with foil and bake for 1 hour at 350°.

5Uncover and let it cool.

6Cut into desired pieces and roll into potato starch.

7Ready to eat.
