- chicken (you may use a whole chicken or cut up or whatever pieces you prefer)
- 3/4 c. white vinegar
- 1/4 c. soy sauce
- 2 bay leaves
- 1 c. water
- garlic (optional)
- oregano (optional)
- black pepper to taste
Directions

1If you like, remove skin from chicken.

2Rub pepper into chicken.

3Place in a non-aluminum pot.

4Mix vinegar and soy sauce together and pour over chicken.

5Mix a second batch of vinegar and soy sauce and pour over chicken.

6Pour the water over the chicken. (If the chicken is not covered, add just enough water to cover.) Add bay leaves and other spices, if desired.

7Bring to boil. Reduce heat and simmer until tender.

8Serve with rice.
