- 4 chicken breast halves, boned and skinned
- 6 medium potatoes, peeled and quartered
- 4 medium carrots, peeled and quartered
- 1 (15 oz.) can tomato sauce
- 1/2 tsp. oregano
- 1/2 tsp. basil
- 1/4 tsp. garlic powder
- 1 green pepper, sliced into rings
- 1 small onion, sliced into rings
Directions

1Spray vegetable oil in shallow 2 1/2 to 3-quart baking dish. Place chicken, potatoes and carrots in dish.

2In bowl, mix together tomato sauce and herbs.

3Pour over chicken and vegetables; mix well.

4Lay pepper and onion rings evenly over top.

5Cover and bake at 350° one hour.

6Remove cover and continue to bake until vegetables are tender and chicken is done, about 20 to 30 minutes.
