- 2 chicken breasts, boned
- 2 slices bacon
- 1 tsp. chopped garlic
- 2 Tbsp. olive oil
- 1/2 pt. light cream
- 2 Tbsp. cornstarch
- 1/4 tsp. cayenne pepper
- 1/2 tsp. oregano
- 1/3 c. frozen peas
- 1 chopped scallion
- fresh ground pepper to taste
- 1/4 c. white wine
Directions

1Cut bacon into small pieces and chicken into about 1-inch cubes.

2Add garlic and oil into hot skillet; cook until chicken is done.

3Remove from skillet.

4Reheat pan and add wine so that it picks up flavors from skillet.

5Slowly add cream, scallions, cayenne pepper, oregano and peas.

6Mix cornstarch with about 4 ounces water.

7Add a little at a time until you get a creamy sauce.

8Add chicken and bacon mixture; heat.

9Add black pepper to taste.

10Serve over pasta.

11Shrimp may be substituted for chicken.
