- 5 c. corn bread
- 6 slices bread
- 4 to 6 eggs
- 2 c. chopped celery
- 1 1/2 c. shallots with tops, cut fine
- 1/2 c. chopped onion
- 1/4 c. butter
- 4 tsp. salt
- 2 tsp. black pepper
- 1 tsp. sage (optional)
Directions

1Cook medium-sized hen.

2Cool and debone.

3To broth, mix corn bread and bread.

4Saute celery, shallots and onions in butter until done, but not brown.

5Add to broth mixture.

6Add seasonings to taste.

7Add beaten eggs.

8Be sure mixture is moist.

9If you need more broth, add 1 can chicken broth.

10Pour into greased Dutch oven and cook at 350° until slightly brown or as desired.
