  • 1 (3 to 4 lb.) chicken
  • 1 tsp. salt
  • water to cover
  • 1/2 c. milk

Directions

    Combine chicken, salt and water in large pot.

    Cook until chicken is tender, about an hour.

    Remove chicken from liquid. When chicken is cool enough to handle, remove meat from the bones. Discard skin and bones.

    Cut chicken into bite-size pieces.

    Add milk to chicken broth and enough water to make 8 cups.

    Add chicken and bring to boil.

    Add dumplings to broth, pepper each layer of dumplings.

    Turn heat to low, and cook, covered, for 20 minutes.
