- 2 each chicken breasts, boneless, skinless, cubed
- 1 each onions chopped
- 6 each mushrooms sliced
- 1/2 each sweet red bell peppers red or green, diced
- 1 tablespoon soy sauce, tamari
- 1 tablespoon vegetable oil
- 10 ounces chicken broth small can
- 4 ounces pineapple chunks small can
Directions

1Heat the oil in a small frying pan.

2Place the onion and chicken in the frying pan and cook until the onion becomes soft and brown.

3Place the bell peppers and mushrooms into the frying pan and cook for 5 minutes, stirring occasionally.

4Add both the cans of soup and pineapple chunks into pan and heat until simmering.

5Add soya sauce into the pan.

6Simmer until the sauce is reduced.

7This can take up to a quarter of an hour.

8Best served with brown rice or noodles.
