  • 2 each chicken breasts, boneless, skinless, cubed
  • 1 each onions chopped
  • 6 each mushrooms sliced
  • 1/2 each sweet red bell peppers red or green, diced
  • 1 tablespoon soy sauce, tamari
  • 1 tablespoon vegetable oil
  • 10 ounces chicken broth small can
  • 4 ounces pineapple chunks small can

Directions

    Heat the oil in a small frying pan.

    Place the onion and chicken in the frying pan and cook until the onion becomes soft and brown.

    Place the bell peppers and mushrooms into the frying pan and cook for 5 minutes, stirring occasionally.

    Add both the cans of soup and pineapple chunks into pan and heat until simmering.

    Add soya sauce into the pan.

    Simmer until the sauce is reduced.

    This can take up to a quarter of an hour.

    Best served with brown rice or noodles.
