Ingredients

  • 2 or 3 chicken breasts, cooked and cut into pieces
  • 2 1/4 c. cooked instant rice
  • 2 boxes chopped broccoli
  • 1 can cream of mushroom soup
  • 1/2 stick butter or margarine
  • 1 1/4 c. mayonnaise
  • 1 lb. Velveeta cheese
  • onion (optional)

Directions

    Cook in saucepan the Velveeta, mayo, butter and soup until blended.

    In a 9 x 12-inch pan coated with Pam, layer 1/2 rice, 1/2 broccoli and 1/2 cheese sauce.

    Then add rest of rice, all of chicken and on top of this the rest of broccoli and the rest of the cheese sauce.

    Bake at 350° for 1/2 hour.
