  • 12 to 18 boneless chicken breasts
  • 1 c. orange juice
  • 1/4 tsp. garlic flakes
  • 1/4 c. parsley
  • flour, seasoned with salt and pepper
  • 2 Tbsp. white raisins
  • 4 Tbsp. small olives
  • 1/4 lb. butter
  • 2 oz. dry sherry

Directions

    Combine orange juice, garlic flakes and parsley for marinade. Marinate chicken overnight or for a few hours.

    Dip chicken in seasoned flour; fry until brown (do not overcook).

    Remove chicken and pour oil out of pan.

    Add butter and sherry and heat until glazed.

    Add raisins and olives.

    Bake chicken at 375° about 25 minutes.

    Pour sauce over chicken last 5 minutes.
