Ingredients

  • 1 lb chicken breast, cut in 3/4 inch pieces
  • 1 teaspoon olive oil
  • 1 (14 ounce) can stewed tomatoes
  • 1 tablespoon lemon juice
  • 2 teaspoons minced garlic
  • 1 cinnamon stick
  • 1 bay leaf
  • 14 cup dry sherry or 14 cup chicken broth
  • salt and pepper
  • 8 ounces egg noodles, cooked and kept warm
  • 14 cup crumbled feta cheese

Directions

    Saute chicken in oil in large saucepan until lightly browned.

    Add tomatoes and their liquid, lemon juice, garlic, cinnamon, bay leaf and sherry.

    Heat to boiling; reduce heat and simmer, covered, until chicken is cooked through; about 15 minues.

    Season to taste with salt and pepper.

    Discard bay leaf and cinnamon.

    Toss chicken mixture with noodles in a large serving bowl.

    Sprinkle with feta and serve.
