- 2 c. boiling water
- dash of salt and pepper
- 1 c. uncooked rice
- 1 can chunk chicken
- 1 can cream of mushroom soup
- 2 or 3 uncooked carrots, sliced
- 1 medium potato, diced
- 2 Tbsp. chicken bouillon
Directions

1Add bouillon, rice, carrots and potatoes to boiling water and salt; cover and simmer for 15 minutes.

2Add mushroom soup (diluted).

3Stir together thoroughly.

4Pour into baking dish and top with chicken chunks and pepper.

5Bake in 375° oven for 15 minutes, then stir and bake for 10 minutes longer or until all liquid is absorbed.

6Strips of cheese may be placed on top of hot rice.
