Chicken Bake

Ingredients

  • 2 c. boiling water
  • dash of salt and pepper
  • 1 c. uncooked rice
  • 1 can chunk chicken
  • 1 can cream of mushroom soup
  • 2 or 3 uncooked carrots, sliced
  • 1 medium potato, diced
  • 2 Tbsp. chicken bouillon

Directions

    Add bouillon, rice, carrots and potatoes to boiling water and salt; cover and simmer for 15 minutes.

    Add mushroom soup (diluted).

    Stir together thoroughly.

    Pour into baking dish and top with chicken chunks and pepper.

    Bake in 375° oven for 15 minutes, then stir and bake for 10 minutes longer or until all liquid is absorbed.

    Strips of cheese may be placed on top of hot rice.
