  • 1 (20 oz.) can pineapple chunks, drain and save juice
  • 2 whole chicken breasts, skinned and boned
  • 1/4 c. honey
  • 2 to 4 Tbsp. fresh lime juice (about 1 medium lime)
  • 4 tsp. cornstarch
  • 2 Tbsp. soy sauce
  • 4 tsp. butter or margarine
  • 1 small green pepper, cut into narrow strips (optional)

    Cut chicken into bite-size pieces.

    Heat butter in a heavy skillet and quickly saute chicken pieces until tender.

    Add pineapple chunks and green pepper.

    Combine 3/4 cup pineapple juice, honey, soy sauce and cornstarch; mix until smooth.

    Add to chicken mixture and cook, stirring until thickened (over medium heat).

    Serve over rice.
