Ingredients
- 1 (20 oz.) can pineapple chunks, drain and save juice
- 2 whole chicken breasts, skinned and boned
- 1/4 c. honey
- 2 to 4 Tbsp. fresh lime juice (about 1 medium lime)
- 4 tsp. cornstarch
- 2 Tbsp. soy sauce
- 4 tsp. butter or margarine
- 1 small green pepper, cut into narrow strips (optional)
Directions

1Cut chicken into bite-size pieces.

2Heat butter in a heavy skillet and quickly saute chicken pieces until tender.

3Add pineapple chunks and green pepper.

4Combine 3/4 cup pineapple juice, honey, soy sauce and cornstarch; mix until smooth.

5Add to chicken mixture and cook, stirring until thickened (over medium heat).

6Serve over rice.
