  • 4 whole chicken breasts, boneless and skinless or 8 splits
  • 1 c. finely crushed Ritz crackers (about 24)
  • 1/2 c. grated Parmesan cheese
  • 1/4 c. finely chopped walnuts
  • 1/2 tsp. seasoned salt
  • 1 tsp. dried thyme
  • 1 tsp. dried basil
  • 1/4 tsp. freshly ground pepper
  • 1/2 c. butter or margarine, melted

    Cover 2 baking sheets with foil.

    Cut chicken into 1-inch pieces.

    Mix cracker crumbs, cheese, walnuts, seasoned salt, thyme, basil and pepper.

    Heat oven to 400°. Dip chicken pieces into melted butter, then into crumb mixture.

    Place chicken pieces about 1/2-inch apart on baking sheets. Bake, uncovered, until golden brown, 20 to 25 minutes.
