Chicken Breast Alfredo

  • 6 chicken breasts, skinned and boned
  • 1/2 c. flour
  • 3 eggs, beaten
  • 3 Tbsp. water
  • 1/2 c. grated Romano cheese
  • 1/2 c. chopped parsley
  • 1/2 tsp. salt
  • 1 c. seasoned bread crumbs
  • 3 Tbsp. butter
  • 2 Tbsp. vegetable oil
  • 6 slices Mozzarella cheese

    Coat chicken breasts with flour.

    Set aside.

    Combine egg, water, Romano cheese, parsley and salt.

    Mix well.

    Dip flour coated chicken into egg mixture.

    Roll chicken breasts in seasoned bread crumbs.

    Heat butter and oil in large skillet and fry chicken until golden brown.

    Cook slowly 10 to 15 minutes.

    Remove to baking dish.

    When ready to bake, top each piece of chicken with a piece of Mozzarella cheese.

    Pour cheese sauce over chicken and bake, uncovered, at 425° for 10 to 15 minutes.

    Serve immediately. Can be done a day ahead, but don't put cheese on.
