- 4 boneless chicken breasts
- 1 (8 oz.) can sliced peaches
- 1 tsp. cornstarch
- 1/2 can water chestnuts
- 2 c. hot cooked rice
- ginger to taste
- salt to taste
Directions

1Spray a large skillet with Pam on heat of medium. Add chicken; cook on medium 8 to 10 minutes until tender. Drain peaches, reserving juice. Add water to equal 1/2 cup. Stir in cornstarch, ginger and salt. Add to skillet which chicken was removed from. Cook until thick and bubbly.

2Cook and stir 1 minute more. Gently stir in peaches and water chestnuts.

3Heat through. Cook rice. Place on serving dish.

4Place chicken next, then spoon peach mixture on top. Serves 4.
