- 4 large boneless chicken breasts
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. olive or salad oil
- 2 Tbsp. butter/margarine
- 3 Tbsp. chopped fresh chives or green onions
- juice of 1/2 lime or lemon
- 2 Tbsp. brandy or cognac
- 3 Tbsp. chopped parsley
- 2 tsp. Dijon mustard
- 1/4 c. chicken broth
Directions

1Pound chicken slightly with mallet.

2Sprinkle with salt and pepper.

3Heat 1 tablespoon oil and butter in skillet.

4Cook chicken in skillet over high heat for 3 minutes on each side. Remove chicken and keep warm.

5Add chives/onions, lime/lemon juice, brandy, parsley and mustard to pan.

6Cook 15 seconds, whisking constantly.

7Whisk in broth.

8Stir until sauce is smooth. Whisk in remaining butter and oil.

9Pour sauce over chicken. Serve.
