Chicken Breasts In Mushroom Sauce

- 4 boneless, skinless chicken breasts
- lemon juice
- pepper
- 1/4 c. butter or margarine
- 2 c. fresh mushrooms, sliced
- 2 tsp. fresh chives, snipped
- 1/2 c. whipping cream
Directions

1Marinate chicken in lemon juice and pepper for 30 minutes. Cook chicken breasts in hot butter or margarine over medium heat for 8 minutes or until golden brown and cooked through; turn occasionally.

2Remove chicken from pan and place on a warm platter; cover to keep warm.

3Reserve drippings in pan.

4Add the mushrooms and chives to the pan and drippings.

5Cook and stir until mushrooms are tender.

6Stir in the whipping cream; boil gently until slightly thickened, scraping the browned bits from the pan.

7Spoon the sauce over warm chicken breasts and serve. Serves 4.
