- 1/2 cup table salt
- 1/4 cup sugar
- 2 tablespoons paprika
- 3 medium garlic heads, cloves separated
- 3 bay leaves, crumbled
- 7 cups buttermilk
Directions

1In a gallon-size zipperlock plastic bag, combine the salt, sugar, paprika, garlic cloves and bay leaves.

2With a rubber mallot, smash the garlic into the salt and spice mixture thoroughly.

3Pour the mixture into a large nonreactive bowl.

4Add the buttermilk and stir until salt is completely dissolved.

5Immerse the chicken in the brine, cover with plastic wrap and refrigerate until fully seasoned, 2-3 hours.

6Coat and fry the chicken.
