Chicken Broccoli Caserole

  • 1 pound frozen broccoli
  • 1 onion medium
  • 2 tablespoons coconut oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 16 ounces mushroom
  • 3 pounds boneless, skinless chicken thigh
  • 1 cup coconut milk
  • 2 eggs

    Preheat oven to 350 degrees F. Grease casserole pan with half the coconut oil

    steam broccoli. Cook and shred chicken

    In sauce pan saute onions and mushrooms in coconut oil until onions are translucent and mushrooms are brown.

    Transfer broccoli, onions and mushrooms, and shredded chicken to caserole dish and mix well.

    Mix fat from chicken thighs with coconut milk, eggs, and salt and pepper and pour into casserole pan.

    Bake casserole for 35 to 40 minutes. Let cool for 5-10 minutes before serving.
