Chicken-Broccoli Chowder

  • 1 pkg. Betty Crocker sour cream 'n chives potatoes
  • 1 1/2 c. thinly sliced carrots
  • 1/3 c. finely chopped onion
  • 3 c. water
  • 2 c. milk
  • 3/4 c. shredded Swiss cheese (1/2 of a 6 oz. pkg.)
  • 1 tsp. instant chicken bouillon or 1 cube
  • 1 (10 oz.) pkg. frozen chopped broccoli
  • 2 c. cut up, cooked chicken

Directions

    Mix all ingredients except chicken and cheese in 3-quart saucepan.

    Heat to boiling, stirring constantly; reduce heat. Cover and simmer, stirring occasionally, until potatoes are tender, 20 to 25 minutes.

    Stir in chicken and cheese.

    Cover and cook until hot, about 5 minutes longer.

    Sprinkle with snipped parsley, if desired.
