Chicken Broccoli Vegetables

Ingredients

  • 2 Tbsp. oleo
  • 4 skinless, boneless chicken (about 1 lb.)
  • 2 c. broccoli Normandy or 1 1/2 c. cut-up broccoli and 1/2 c. thinly sliced carrots
  • 1 c. sliced mushrooms
  • 1 can cream of broccoli soup
  • 1/2 c. milk
  • 1/4 tsp. pepper

Directions

    In skillet over medium heat in 1 tablespoon hot oleo, cook chicken for 10 minutes or until brown on both sides.

    Remove chicken.

    In same skillet, add remaining oleo.

    Cook broccoli, carrots and mushrooms for 5 minutes, stirring often.

    Stir in soup, milk and pepper.

    Heat to boiling.

    Return chicken to skillet.

    Reduce heat to low, simmer 5 minutes or until chicken is fork-tender.
