  • 1 Large Chicken
  • 120 grams Onions- peeled and diced
  • 110 grams Celery- diced
  • 150 grams Carrots- peeled and diced
  • 3 Cloves of garlic
  • 2 sprigs Thyme
  • 1 bunch Parsley
  • 10 Peppercorns
  • 1/2 inch fresh Turmeric
  • 4 liters Water

Directions

    Place all the ingredients into a large saucepan.

    Bring to the boil and then simmer on low with the lid on for 4 hours.

    Skim off any fat or scum that rises to the surface.

    Pour through a strainer and discard the meat and vegetables.

    Freeze in 1 liter (4 cups) and 1/2 litre (2 cups) lots.
