- 1 Large Chicken
- 120 grams Onions- peeled and diced
- 110 grams Celery- diced
- 150 grams Carrots- peeled and diced
- 3 Cloves of garlic
- 2 sprigs Thyme
- 1 bunch Parsley
- 10 Peppercorns
- 1/2 inch fresh Turmeric
- 4 liters Water
Directions

1Place all the ingredients into a large saucepan.

2Bring to the boil and then simmer on low with the lid on for 4 hours.

3Skim off any fat or scum that rises to the surface.

4Pour through a strainer and discard the meat and vegetables.

5Freeze in 1 liter (4 cups) and 1/2 litre (2 cups) lots.
