Chicken Cabbage Rotel

  • 3 lb. boneless skinless chicken
  • 3 cans Ro-Tel
  • 1 packet taco seasoning
  • 2 bunches green onions
  • 1 head cabbage
  • salt and pepper to taste
  • 1 (16 oz.) sour cream
  • large bag Mozzarella and Cheddar cheese each

Directions

    Cub cabbage into small pieces and put in large pot.

    Add salt and pepper to taste and cook until tender. Boil or grill chicken. Cut into pieces and place in skillet.

    Chop green onions and add to chicken.

    Then add all three cans of Ro-Tel (juice included). Also, add the 1 pack of taco seasoning.

    Turn on low and simmer until cabbage is done.

    Drain cabbage and return to the pot.

    Pour chicken mixture on top of cabbage and mix well.

    Then pour into a 9 x 13 pan.

    Top with sour cream and then add cheese.

    Bake at 375° until cheese is melted to golden brown.
