Chicken Cacciatora Recipe

  • 1/4 c. extra virgin olive oil
  • 1 chicken, cut up
  • 2 onions, sliced
  • 2 garlic cloves, chopped
  • 2 c. Italian tomatoes (1 pound can)
  • 1 can tomato sauce
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon celery seed
  • 1 teaspoon crushed dry oregano
  • 2 bay leaves
  • 1/2 c. dry white wine
  • 1 teaspoon leaf basil
  • 1/2 teaspoon thyme
  • Green pepper, minced

Directions

    Heat oil in deep skillet.

    Brown chicken in oil.

    Remove chicken.

    Cook onions and garlic in oil till tender.

    Add in other ingredients (except wine) and blend.

    Cook for 5 min.

    Return chicken to pot, cover and simmer for 45 min.

    Add in wine and some Parmesan cheese.

    Cook for 15 min.

    Serve with noodles or possibly spaghetti.
