Chicken Cacciatore

Ingredients

  • 2 lb. chicken breasts and thighs
  • 2 diced onions
  • 1 diced bell pepper
  • 2 diced pods garlic
  • 3/4 c. parsley
  • 2 or 3 large (29 oz.) cans tomato sauce
  • 2 or 3 bay leaves
  • 1/2 lb. diced mushrooms (optional)
  • salt and pepper
  • thyme
  • basil
  • olive oil
  • vegetable oil
  • cooked pasta

Directions

    Salt, pepper and thyme the chicken pieces.

    Sear in a mixture 3 parts olive oil to 1 part vegetable oil.

    Remove chicken and set aside.

    Remove all but 2 tablespoons oil.

    Add diced onions, bell pepper and garlic.

    Saute until onions are clear.

    Add chicken and cover with tomato sauce.

    Add mushrooms, bay leaves, parsley, 1 teaspoon basil and 1 teaspoon thyme.

    Cook for about 30 minutes while moderately boiling, until chicken is done.

    Serve over cooked pasta.
