- 3 lb. chicken breasts or fryer
- 1 Tbsp. olive oil
- 4 oz. jar mushrooms, chopped
- 1 medium onion, chopped
- 1 medium garlic, chopped
- 1/2 c. dry white wine
- 1 1/2 c. Tbsp. white wine vinegar
- 1/2 c. chicken broth
- 1 tsp. dried basil
- 1/2 tsp. marjoram
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 can whole tomatoes (remove seeds, cut up, reserve in liquid)
- black olives
- parsley
Directions

1Brown chicken in oil 8 minutes each side.

2Remove from heat. Add mushrooms and onions.

3Saute.

4Add garlic, wine and vinegar. Cook on medium heat.

5Almost all evaporated 5 minutes.

6Stir in broth, basil, marjoram, salt and pepper.

7Add tomatoes into onion mixture.

8Cook 2 minutes.

9Pour over chicken.
-
10Cook on low 25 minutes.

11Remove chicken.
-
12Heat liquid to a boil for 5 minutes. Add olives and parsley to sauce.

13Pour over chicken and serve.
