Chicken Cacciatore

- 1 large frying chicken, cut into pieces
- 1/2 c. oil
- 2 small onions, sliced thin
- 2 cloves crushed garlic
- 3/4 c. white wine
- 1 large can Italian tomatoes or 6 fresh tomatoes, peeled and seeded
- 2 pinches basil
- salt and pepper to taste
- parsley to garnish
Directions

1Heat oil and cook the chicken pieces in it until they are golden brown, turning frequently.

2Add onions; cook a few minutes longer.

3Add garlic, tomatoes, basil, salt and pepper.

4Cover pan and cook gently until chicken is done and tomatoes are cooked to a sauce.

5Stir occasionally.

6Continue cooking for about 45 minutes. Add wine.

7Cook another 15 minutes.

8Serve with Italian Rice and a green salad.
