Chicken Cacciatore

Ingredients

  • 1 large frying chicken, cut into pieces
  • 1/2 c. oil
  • 2 small onions, sliced thin
  • 2 cloves crushed garlic
  • 3/4 c. white wine
  • 1 large can Italian tomatoes or 6 fresh tomatoes, peeled and seeded
  • 2 pinches basil
  • salt and pepper to taste
  • parsley to garnish

Directions

    Heat oil and cook the chicken pieces in it until they are golden brown, turning frequently.

    Add onions; cook a few minutes longer.

    Add garlic, tomatoes, basil, salt and pepper.

    Cover pan and cook gently until chicken is done and tomatoes are cooked to a sauce.

    Stir occasionally.

    Continue cooking for about 45 minutes. Add wine.

    Cook another 15 minutes.

    Serve with Italian Rice and a green salad.
