- 2 Tbsp. cooking oil
- 2 medium onions, cut in 1/4-inch slices
- 2 cloves garlic, minced
- 2 to 3 lb. chicken
- 1 (16 oz.) can tomatoes, cut up
- 1 (8 oz.) can tomato sauce
- 1 tsp. salt
- 1 tsp. oregano or basil
- 1/2 tsp. celery seed
- 1/4 tsp. pepper
- 1 or 2 bay leaves
- hot, cooked rice
Directions

1In a large skillet, heat oil.

2Add onions and garlic.

3Cook until onions are tender.

4Remove onions and set aside.

5Add more oil if needed; brown chicken for 15 minutes.

6Return onions; add rest of ingredients except rice and cook for 30 minutes, covered. Chicken is done when easily pierced with a fork.

7Remove bay leaves and serve over hot rice.
