Ingredients

  • 2 Tbsp. cooking oil
  • 2 medium onions, cut in 1/4-inch slices
  • 2 cloves garlic, minced
  • 2 to 3 lb. chicken
  • 1 (16 oz.) can tomatoes, cut up
  • 1 (8 oz.) can tomato sauce
  • 1 tsp. salt
  • 1 tsp. oregano or basil
  • 1/2 tsp. celery seed
  • 1/4 tsp. pepper
  • 1 or 2 bay leaves
  • hot, cooked rice

Directions

    In a large skillet, heat oil.

    Add onions and garlic.

    Cook until onions are tender.

    Remove onions and set aside.

    Add more oil if needed; brown chicken for 15 minutes.

    Return onions; add rest of ingredients except rice and cook for 30 minutes, covered. Chicken is done when easily pierced with a fork.

    Remove bay leaves and serve over hot rice.
