Ingredients
- 3 lb. whole chicken, cut up
- 1/4 c. shortening
- 1/2 c. flour
- 2 c. thinly sliced onion rings
- 1 c. thinly sliced bell pepper rings
- 2 cloves crushed garlic
- 1 lb. can tomatoes, drained
- 1 (8 oz.) can tomato sauce
- 1 (3 oz.) can drained mushrooms
- 1 tsp. salt
- 1/4 tsp. oregano
- 1 tsp. celery salt
Directions

1Melt shortening in a large skillet.

2Coat chicken with flour. Cook over medium heat 15 to 20 minutes or until light brown. Remove chicken and set aside.

3Add onion and green pepper rings and garlic to skillet.

4Cook and stir over medium heat until tender.

5Stir in remaining ingredients.

6Add chicken to sauce. Cover.

7Simmer 30 to 40 minutes or until thickest pieces are fork-tender.

8Serve over rice.
