- 4 lb. frying chicken
- 2 onions, chopped
- 5 Tbsp. olive or salad oil
- 1/3 c. flour
- 1 to 2 cloves garlic, chopped
- 1 can large tomatoes
- 1 c. sliced mushrooms
- 1 large green pepper
- salt and pepper
Directions

1Cut chicken into serving portions.

2Season with salt and pepper; roll lightly in flour.

3Heat oil in skillet and brown chicken lightly on both sides, about 10 minutes.

4Seed and place green pepper lengthwise.

5Mix with chopped onion, chopped garlic and tomatoes.

6Add this to chicken.

7Cover and simmer until chicken is tender.

8Add sliced mushrooms; simmer for about 15 minutes more.

9Remove chicken to large platter; pour sauce over chicken.

10Serve immediately.
